Ingredients
150 gms oil, garam masala (3 elaichi, 10 loung, and 2 stick cinamom), 600 gms onions, 500 gms mutton, 250 green chilies and other spices as mentioned
Method
Pan 150 gms oil, 3 elaichi, 10 loung, and 2 stick cinamom splutter for a minute or 2. Add 600 gms onions sliced fry till golden approx should take 10 mins do it on sim or will burn the onions, add 3 tbsp ginger garlic paste fry well Add 500 gms mutton and saute 5-7 mins, add 1 tsp haldi, 3 tsp red chili, salt to taste and 250 chopped tomatoes and handful of herbs (mix of coriander and pudina), 7 green chillies. Saute all for 4-5 mins. Pressure cook till done about 1 whistle and 5 mins on sim. By this time meat is 3/4th done. Now add 1 cup curd, juice of 1 lime and check salt and seasoning adjust accordingly. (might require salt or chilly accordingly to once preference) Par boil 500 gms Rice with salt till 3/4 done...strain and layer over gravy. top with few leaves of coriander and drizzle colour (kesari) or saffron diluted in milk and give dum for 5-10 mins.
